Where do dates come from?
The date palm trees, which mainly exist in tropical regions of the world. To be more specific, we can refer to the fact that date palms are native to the

Different Types of Dates
As you might know, we classify dates into many types. Lulu, Piyarom,
Kabkab, Mazafati, Zahedi, Shahani, Sayer, Rabbee, and some more are types of dates. As mentioned before, the Middle East is the rich source of different
dates that supply about 24-26% of the world’s dates.
It’s important to know that the difference between Rotab and simple is that
Rotab has more moisture and less sugar than simple types. In other words,
Rotab is not as mature as the simple.
Shahani
Shahani Dates
Are narrow, bright brown with 25% maximum moisture. They divided these
into Soft and Dry ones. Shahani is like Rabee, and sometimes they are mistaken. However, colors are discriminative. By paying attention to colors, we can
realize that it is Shahani or not. Same as the other Types,
Shahani is high in vitamins, minerals, and iron.
Shahani is moist but can be harvested in both semi-dry and dry forms. Besides, it is sweeter than other types. That’s why we consider it a sweetener in
the industry. Although Shahani is sweet, it is harmless since people
consume it properly.
It’s worth mentioning that the harvest time for Shahani is in autumn. As a matter of fact, the Shahani tree palm is very fertile. Moreover, Shahani can be
in storage and warehouse much longer than the other types, only if the
conditions are proper with temperature 10 -20 c. Against all said,
Shahani not only are not high in cholesterol but regulate the blood
pressure and cholesterol.
Mazafati
Mazafati OR Kimia
Are the most popular among others. Mazafati has the highest export
volume among other types of dates. Its moisture content varies between
15–35% which is higher than the other types. Bam and Iranshahr in Iran
are the major sources of Mazafati, respectively. We estimate that Bam
produces about 70000-80000 Tonnes of Mazafati annually. Additionally,
Mazafati from Bam, compared to those from Iranshahr, are more
wrinkled. Iranshahr’s Mazafati has fewer wrinkles and is a little sweeter.
Generally speaking, India’s market has a high demand for Mazafati. To be more specific, Bam Mazafati has a high demand in India. Infinity Nuts can supply

Piyarom
Piyarom with a moisture of 15% has high demand in European countries
and Canada. Since Piyarom has a high potential for insect absorption,

Piyarom is those of the dates for which demands are high in the global market. Its skin is thin and dark brown and is very nutritious since it is full of
proteins, minerals, and vitamins. Besides, the Harvest time for
Piyarom is in September.
Kabkab
Kabkab Dates is appropriate for both industry and direct consumption.
In other words, it is nectarous, soft, and delicious. Its moisture content is about 18%
that causes the fine texture . They harvest this type in mid-September.
Zahedi
Zahedi
are thick, small, shiny, and dry. Its moisture content is 14%, which indicates the dryness of this. Zahedi are less sweet than the other types. Zahedi are harvested in mid-September. This type can be transported by standard containers since it is dry there is no need for refrigerated containers. Zahedi can be eaten directly; moreover, they are widely used in industry, cereals, puddings, bread, cakes, etc as a flavor changer and natural sweetener.
